80ml Absolut Vodka
20ml sugar syrup
240ml pineapple juice
1 slice fresh pineapple
To create sugar syrup combine one part sugar to two parts water. Bring to the boil in a small saucepan and continue stirring until sugar has dissolved. Allow to cool.
Once cooled combine sugar syrup, Absolut Vodka and pineapple juice in a cocktail shaker.
Shake and strain into a cocktail glass.
Garnish with fresh pineapple.
50ml Bombay Sapphire
15ml dry sherry
2 lemon wedges
100ml Fever Tree Sicilian Lemonade
4 medium sized mint leaves, each ripped in half
1 mint sprig to garnish
Gently squeeze the lemon wedges into a curved highball glass.
Add the mint leaves, dry sherry and Bombay Sapphire then stir well to mix and infuse.
Fill the glass with ice and top with Fever-Tree Sicilian Lemonade .
Gently stir to combine, then garnish with a mint sprig.
50ml Bacardi Carta Blanca rum
4 lime wedges
12 fresh mint leaves
2 tsp sugar
25ml soda water
Sprig of fresh mint
Squeeze the lime wedges into your glass. Muddle with sugar.
Bruise the mint leaves by clapping them between your palms – this helps to release the flavour – then rub them on the rim of the glass before dropping them in.
Half fill your glass with crushed ice then add Bacardi and stir.
Top with more crushed ice, a sprig of mint and club soda.
Pink Grapefruit Margarita
1 lime cut into wedges
Salt or sugar for rim
150ml ruby red grapefruit juice
70ml freshly squeezed lime juice
1 cup of ice
1 or 2 shots of Jose Cuervo Tradicional Blue
Agave nectar for taste
Rub a slice of lime around the edge of your glass then dip the rim lightly in salt or sugar. Set aside to dry.
Combine grapefruit juice, lime juice, Jose Cuervo and agave nectar into a cocktail shaker.
Pour over ice and enjoy!
